Everyone looks for something different, but for me, it comes down to three things.

1. Meat

It’s not just about the grade or the name.

What matters is the intention behind each cut. How it’s prepared, how it’s presented, and how it’s meant to be enjoyed. The best yakiniku spots think about the full experience of each bite, not just the label.

2. Sides

Sides are not just there to fill the table.

They should support the meal and bring balance. Whether it’s something fresh, something pickled, or something warm, every dish should have a role. When done right, the sides make the meat even better.

3. Passion

Yakiniku can look simple from the outside.

But what makes a place stand out is the care behind it. The philosophy, the atmosphere, and the people all shape the experience. You can feel when a place takes pride in what they do.
